Philosophy

Every drink begins months before the bar.

Green Jar is a cocktail lab with full in-house production in Ibiza. Nothing is bought ready-made. We ferment, we cook, we design every element of the bar before it reaches the guest's hand.

Origin

Two paths, one bar.

Green Jar Ibiza is founded and run by Leonardo Marinucci (Brazil) and Facundo Grieco (Argentina). Two long careers in international hospitality that ended up converging on the island and shaped the lab.

The starting premise was simple, and uncommon: buy nothing ready-made. If mixology is a craft, the syrups, ferments, juices and infusions have to be born in our own kitchen. What you see at a Green Jar bar passes through our hands first.

Pillars

Three principles. No shortcuts.

Each pillar means a costly decision, more time, more logistics, more craft. It's what sets a correct bar apart from a memorable one.

The kitchen before the bar.

In-house production means the cost, the time and the responsibility for every base falls on us. We take it on because cooking the product is the only honest way to sign it.

  • Juices freshly pressed every morning of service
  • Hand-cooked syrups made with local produce
  • Ferments (kombuchas, vinegars, shrubs) that wait weeks
  • House infusions, tinctures and macerations
  • Traceability of the citrus down to the grower

Local. Circular. Zero waste.

Sustainability is a daily practice, not a sales pitch. We work with nearby growers, we reuse what is normally discarded, and we choose every material with its impact in mind.

  • Produce from Ibizan growers whenever possible
  • Reuse of pulps, peels and by-products
  • Reusable glassware and crockery, zero single-use plastic
  • Bio brands and small-batch producers prioritised
  • Logistics designed to minimise transport

The bar is staging.

Service begins before the first drink. We arrange every bar as a designed piece and rehearse our gestures like a ballet, so the guest only perceives elegance.
